Marinade: To add flavor and tenderness to the chicken lollipops, marinade them. You can use any marinade you like, but I’ll recommend three marinades that I discovered online. The first recipe is a spicy yogurt marinade made with yogurt, ginger garlic paste, red chili powder, pepper, salt, and soy sauce.

The second one is a sweet and sour marinade, which comprises onion, ginger, garlic, soy sauce, vinegar, red chili sauce, sugar, and water. The third recipe is a simple buttermilk marinade with buttermilk, salt, and pepper.

– Coating: To make the chicken lollipops crispy and crunchy, coat them with a flour-cornstarch mixture, or cornflour. To add more flavor to the coating mixture, add some spices like red chili powder, garam masala, or any other spice powder you want.

The second is a honey garlic sauce, which is a sweet and sticky mixture of honey, garlic, soy sauce, vinegar, and cornstarch. The third option is barbecue sauce, a smoky and flavorful sauce mixed with ketchup, brown sugar, vinegar, Worcestershire sauce, mustard, and smoked paprika.

How to Make Chicken Lollipop Recipe

To make chicken lollipop recipe, you will need to follow these steps:

1. Cut and shape chicken wings into lollipops: this will require a sharp knife and a cutting board. 

Step 1: First, chop off the chicken wing tip and discard it or keep it for stock. Then, at the joint, separate the chicken wing into two parts: the drumette and the winglet. 

Step 2: Next, take the drumette and cut around the narrow end of the bone to expose the skin. Push the skin down to the thick end of the bone, creating a lollipop shape. Repeat the method with the winglet, but first remove one of the two bones.

Step 4: Alternatively, you can use pre-cut and shaped chicken lollipops, which are available at some grocery shops and online.

2. Marinate the chicken lollipops: This will require a large bowl and plastic wrap or a lid. 

Step 1: First, select one of the marinades listed above, or make your own marinade. 

Step 2: Then, place the chicken lollipops in the bowl and pour the marinade over them. Ensure that all of the chicken lollipops are well coated with the marinade. 

Step 3: Cover the bowl with plastic wrap or a cover and refrigerate for at least an hour, or up to overnight, to allow the chicken lollipops to absorb the flavor and tenderize.

3. Coat the chicken lollipops: This requires a shallow plate, a fork, and a wire rack. 

Step 1: First, select one of the coating combinations indicated above, or create your own coating mixture. 

Step 2: Then, put the coating mixture onto a shallow plate and leave aside. Next, remove the chicken lollipops from the marinade and shake off the excess marinade. Do not discard the marinade; you may need it later. 

Step 3: Then, using a fork, dip each chicken lollipop in the coating mixture, ensuring that all sides are thoroughly coated. 

Step 4: Place the coated chicken lollipops on a wire rack and allow to rest for 10 to 15 minutes, or until the coating is dry and firm.

4. Fry or bake the chicken lollipops: This requires a large skillet or wok, a slotted spoon, a baking tray, an oven, and a thermometer.

Step 2: You may also prepare the sauce with part of the remaining marinade, but make sure to boil it for at least 10 minutes to kill the bacteria. 

Step 3: Next, transfer the sauce or dip to a small dish and set it on a serving platter.Arrange the chicken lollipops in the bowl and decorate with chopped spring onions or celery, if desired. 

Step 4: Serve the chicken lollipops hot or heated, with the sauce or dip to the side.
